Simple Black Bean Veggie Burgers

A great addition to any summer BBQ, our favourite black bean veggie burger recipe is not only delicious but also packed with nutrients. Here’s how to make them:

Ingredients:

• 1 1/2 cups cooked black beans, rinsed and drained
• 1/2 medium white onion, finely diced
• 1/2 cup rolled oats
• 1/4 cup breadcrumbs
• 1 tbsp chili powder
• 1 tsp cumin
• 1/2 tsp salt
• 1/4 tsp black pepper

Instructions:

1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth with some chunks remaining.
2. Add the diced onion, oats, breadcrumbs, chilli powder, cumin, salt, and pepper to the bowl. Mix everything together until well combined.
3. Divide the mixture into 4 equal portions and shape each into a patty about 1/2 inch thick.
4. Heat a drizzle of oil in a skillet over medium heat. Cook the patties for 3-4 minutes per side until browned and heated through.
5. Serve the veggie burgers on buns with your favourite toppings like lettuce, tomato, avocado, mustard, etc. Enjoy!

Easy Vegetarian Sausages

We have enjoyed making these easy vegetarian sausages as a perfect plant-based option for your BBQ. Here’s our recipe:

Ingredients:

• 1 1/2 cups cooked green lentils
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1/2 cup walnuts, finely chopped
• 1/2 cup fresh breadcrumbs
• 1 tbsp soy sauce
• 1 tsp smoked paprika
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 tbsp ground flax + 3 tbsp water (flax egg)

Instructions:

1. In a food processor, pulse the cooked lentils, onion, garlic, walnuts, breadcrumbs, soy sauce, paprika, salt, and pepper until combined but still slightly chunky.
2. Mix the ground flax and water in a small bowl and let sit for a minute to thicken. Add this flax egg to the food processor and pulse to incorporate.
3. Divide the mixture into 6 equal portions. Shape each portion into a sausage shape about 4 inches long.
4. Wrap each sausage tightly in plastic wrap, twisting the ends. Steam the wrapped sausages for 15-20 minutes until firm.
5. Unwrap the sausages and pan fry in a little oil for a few minutes, turning occasionally, until browned on all sides.
6. Serve the vegetarian sausages in buns with mustard and sauerkraut or alongside mashed potatoes and sautéed veggies. Enjoy!
